Meetha Pulao or Zarda
Zarda a traditional sweet dish is made with aromatic rice, food colouring, sugar and flavoured with cardamom, cashew, dry coconuts, nuts etc.
One of my favourite and delicious dish from royal delicacies.
Ingredients:
- Biriyani Rice 500 gms
- Ghee 4 tbsp
- Cardamom(Elaichi) 3-4
- Cinnamon(Dalchini) Sticks – 1
- Cloves(Laung) – 3-4
- Bay Leaf (Tez patta) – 1
- Sugar 250 gms
- Water 1 litre
- Food Color 1/2 tsp
- Cashew 10-12
- Dry coconut handful
- Petha handful
- mini rosagollas handful
Preparation :
Step 1 : Heat a Pan and add ghee, add the whole spices and saute.
Step 2 : Add the Biriyani Rice and stir. Add water and food color. Mix well, cover and cook in high flame for 10 minutes. Check and cook in medium flame for another 10 minutes
Step 3 : Once all water is soaked and rice is cooked well, add sugar and mix. Mix very lightly to prevent the rice from breaking, cover and cook for another 5 minutes in low flame.
Step 4 : Your Meetha Pulao is ready to serve. Garnish with cashew, nuts, finely sliced dry coconut, petha and mini rosagollas.
Step by Step preparation with pictures:
Heat a Pan and add Ghee 4 tbsp
Add all the of the whole spices mentioned.
Add washed biriyani rice and stir.
Add water 1 litre and mix well.
Add food coloring any color of your choice, usually its red or orange. Mix well.
Cover and cook for almost 10 minutes in high flame.
Check the water level, cook for another 10 minutes in medium flame.
After 10 minutes check the water is complelety soaked and rice is cooked. If yes, add sugar and mix well. Mix very lightly to prevent the rice from breaking.
Cover and cook for another 4-5 minutes in low flame.
Check the sugar is completely dissolved. Once done your delicious sweet dish is ready to serve. It smells amazing and tastes yum…
Start adding the dry fruits of your choice, cashew, nuts, pistachios, dry coconut, petha, rosagolla.
Please Note : We can even add khoya to this recipe while cooking, that also tastes good.
