Veg Fried Rice Recipe

“A vegetable fried rice cooked on low to medium flame, is a dish full of veggies, flavors and taste.It’s a dish in itself or can be an accompaniment to another dish.It tastes more flavorful and delicious with chilli chicken/chill paneer or any Indo-Chinese Dish”

Ingredients:

  • Rice 500 gms
  • Ghee 2-3 tbsp
  • Peas 1/2 cup
  • Finely chopped onions – 1
  • Chopped carrots 1/4 cup
  • Green chillies 2-3
  • Sweet corn 2-3 tbsp
  • Spring onions 2-3 tbsp
  • Bean/ Barbati 1/4 cup
  • Ginger garlic grated or make a paste 1 tsp
  • Dalchini 1
  • Cardamom 2
  • Black cardamom 1
  • Cloves 4
  • Salt to taste
  • Mint and coriander leaves for garnish

Preparation:

Step 1: Heat a pan and add ghee and onions (u can add jeera if you want that’s optional)
Step 2: Wait for the onion to turn translucent , then add ginger garlic paste/grated.
Step 3: Add onion stalk and after 2-3 mins of cooking start adding the vegetables of your choice.
Step 4: Add dalchini, green cardamom, black cardamom and cloves. Salt to taste.
Step 5: Add 11/2 cup of water(water should be so much that rice is just submerged- do not add too much water)
Step 6: Cook in high flame for 10 mins or till the rice is half cooked and water evaporated.
Step 7: Cook in low flame for another 10-15 mins(Note: U can keep tawa at the bottom and leave it to cook, this way your rice won’t burn)

Garnish with mint and coriander leaves and serve with Shahi Butter Paneer, Shahi Mutton Korma or Chilli chicken etc
